MAKING SUGAR FREE JELLO FOR THE ATKINS DIET

One of the major problems for dieters using the Atkins Diet is that so many foods that are low in carbohydrates are high in calories. The answer to many a dieters’ prayer, especially those with a ravenous sweet tooth is sugar free Jello.

Sugar free jello contains zero grams carbohydrates per serving and makes a delicious dessert or snack. It’s also fat free, sugar free, and only ten calories per serving. It can be used in a number of recipes to make loads of yummy treats. But more of that anon. Let’s start with the basics.

Jello is easy to make. If you are using a packet all you have to do is tip the dry gelatin into a bowl, pour 2 or 3 cups of boiling water, stir like crazy for a couple of minutes, add some cold water and allow it to cool and set in the fridge. That’s all there is to it!!!! Or is it?

Firstly a word of warning. Jello comes in a number of fruity flavours, all of which are wonderful Atkins based treats. However, Jello also makes a sugar free pudding, which comes in a very similar box. The very first ingredient in the sugar free pudding is “modified food starch” a definite no-no on Atkins’.

There has been some concern that there was a certain ingredient in some sugar-free jellos that could really mess with an Atkins diet. Some brands include aspartame. Certain people have experienced stalls with using artificial sweeteners, or the sweet tastes cause cravings. Not everyone experiences it though. If you don’t have a problem with diet soda with aspartame, the jello shouldn’t hurt you either.

Jello is so much more than a wobbly snack. Here are a couple of ideas of what you can do with it:-

Atkins Jello Shots
This flavor of Sugar Free Jello is my Fav!
1 package or sugar free jello any flavor
2 Cups boiling water
2 Cups alcohol your choice

To make Fancy Jello Shots, put the alcohol in the freezer ahead of time to let it get nice and cold. Make the jello as directed on the package using the boiling water, etc. Substitute the chilled alcohol for the cold water in the recipe.

Use different flavors and alcohols to create drinks with the jello-shots. Lime jello & tequila(Margarita), orange jello and vodka(Screwdriver), strawberry jello and rum(Daquiri),etc…Hint use 2oz. plastic soufflé cups to make the jello shots in(available at any party store cheap). They work best.
For easier serving place them on a tray in the fridge. Bring out when ready to serve.
